Pioneering food science for human health through mass spectrometry and multi-omics.

In this project, we aim to promote human health through food science, combining advanced techniques such as high-resolution mass spectrometry, multi-omics, and research with various cell lines. Our research focuses on using these techniques to analyze how nutrients and food components affect the body, with the goal of evaluating and predicting both the health benefits and potential risks of foods.
